The kitchen
Nosara is the kitchen inside LUMA. Coastal food, cooked to order, from the first breakfast burrito of the morning to the last board that goes out to the venue.
What it is
The name comes from a stretch of coast in Costa Rica where the food is simple and the day is built around being outside. That is the idea here. Rice and black beans, avocado, pickled onions, salsa verde, corn-lemon salad, protein off the grill.
Nothing sits under a lamp. Every bowl, taco and crepe is made when you order it, which is why a busy Saturday takes a few minutes longer. It is worth the wait.
The man who wrote the menu
Executive chef, and the author of every plate Nosara sends out.
The bowls, the crepes, the tacos, the boards: every one of them was designed by Charlie for this venue, this climate and this crowd, then tested until it worked on a Saturday at noon with forty covers waiting.
A chef who has run his own restaurants cooks differently. He knows what a plate costs, what it takes to send a hundred of them, and which shortcuts are never worth it.
He is not a name on a menu who visits twice a year. He is in the kitchen, which is why the bowl you order in September tastes like the one you had in June.
